The ingredients needed to cook Mushroom Xacuti:
- Use 250 gm mushrooms
- Provide 1 medium tomato chopped
- Use 1 tbsp oil
- Use to taste Salt

- Provide 2 tbsp oil
- Get 1 medium onion chopped
- Take 1/2 cup grated fresh coconut
- Prepare 2-3 dry red chillies
- Take 1 tbsp coriander seeds
- You need 1/2 tsp black peppercorns
- Provide 3-4 cloves
- Get 1/2 tsp turmeric powder
- Get 1 tsp tamarind pulp/ a marble sized ball of tamarind
- Get 1 tsp Kashmiri mirch powder
- You need ae to Water
- Get as needed Chopped green coriander for garnishing
Steps to make Mushroom Xacuti:
- Wash, clean and chop the mushrooms into small pieces. Keep aside.
- Heat 2 Tbsp oil in a wok/ karahi. Add chopped onions to it and saute till pink.
- Now, add coriander seeds, peppercorns, clove and dry red chillies. Saute for 2 minutes till it slightly changes colour.
- To this add grated coconut and saute on low flame till it turns light brown. Take care that it doesn't burn.
- Switch off the flame. Add tamarind paste, turmeric powder and kashmiri mirch powder. Stir well and let the mixture cool.
- Transfer the cooled coconut mixture to a blender jar and grind to a fine paste, adding about 1/2 cup of water. Keep the paste aside.
- Heat 1 Tbsp oil in the same wok and add chopped tomatoes to it. Cook till the tomatoes are soft and mushy.
- Add chopped mushrooms and little salt to the mushy tomatoes. Mix and cook till mushrooms release water and turn soft.
- Now add the coconut paste to the mushrooms. Add 1/2 cup water if required. Adjust salt and mix well. Cook till the mushrooms, are completely cooked(around 10 minutes).
- Xacuti is ready. Serve garnished with chopped green coriander.
