The ingredients needed to prepare Shukto Sukto Suktoni:
  1. Provide 1 Medium sized Potato
  2. Use 1 cup Drumstick (sojnedata)
  3. Use 1 Raw banana
  4. Get 0.5 cup Raw papaya
  5. Take 2 cup Brinjal
  6. Prepare 1 Medium sized bitter gourd (korola/ karela)
  7. Get 2-3 potol (Parwal/Pointed gourd)
  8. Prepare 1 Medium Sweet Potato-optional🍠
  9. Get 1 cup Flat beans (sheem)-optional
  10. Take 10-12 Dried lentil dumplings(bori)
  11. Get 1.5 teaspoon Salt
  12. Get 0.5 cup Mustard Oil
  13. Prepare 1-2 Bay leaf
  14. Use 1 teaspoon Panch phoron (bengali five spice mix)
  15. You need 3 teaspoon Ginger paste
  16. Get 1 teaspoon Wild celery seed (radhuni)
  17. Take 1 tablespoon Yellow Mustard seed
  18. Take 1 tablespoon Black Mustard seed
  19. Prepare 1 tablespoon Poppy seed
  20. Get as needed Water (for gravy)
  21. Provide 1-2 teaspoon Sugar
  22. Provide 0.25 cup Raw Milk
  23. Use 1 teaspoon Ghee
Steps to make Shukto Sukto Suktoni:
  1. Try to cut the vegetables in the same size pieces (e.g. 2" pieces) except bitter gourd.
  2. Slice the bitter gourd.
  3. Make 3 different pastes with little water: 1.Radhuni; 2. Two types of Mustard seeds together; and 3.Poppy seeds.
  4. Mix a bit of salt with the vegetables before frying.
  5. Take 2tbs oil in a non stick wok and fry the bitter gourd at the very beginning. Keep it aside.
  6. ⚠️Don't use this oil for the future frying vegetable as it can make the shukto bitter🚮
  7. Take the rest of the oil and lightly fry the vegetables one by one. Keep aside.
  8. Fry the bori too and keep aside
  9. Temper the remaining oil with Panch phoron and bay leaves
  10. Add the ginger paste and fry it.
  11. Add little water and cook it for a couple of minutes.
  12. Add the Radhuni paste and fry for a minute.
  13. Add the mustard paste and fry for a minute🌝🌚
  14. Add poppy seeds paste and again fry it for couple of minutes.
  15. Add little water meanwhile💧
  16. Add salt and sugar.
  17. Add the all the fried vegetables and give it a mix🥗
  18. Add water for the gravy (2cups or so).
  19. Cover and simmer until the vegetables are perfectly boiled.
  20. Add the raw milk and the fried bori
  21. Add ghee and switch off the flame.
  22. Let it cool a bit and Enjoy
  23. Note: Use raw milk only.
  24. Note: Chillies are not used in shukto.
  25. Note: Shukto can be prepared with less oil than I mentioned in my recipe for healthier version.
  26. Note: Normally shukto is not eaten hot. So serve it when it's not very hot or just at room temperature.
