  1. You need 3-4 Bittergourd, cut toto medium sized pieces
  2. Provide as required Choice of veggies (raw banana, raw papaya, potato, flat beans, carrot, drumstick,radish) cut into medium sized pieces 2 cups
  3. Get 1 teaspoon Mustard seed
  4. Provide 1 teaspoon Methi seed / fenugreek
  5. You need 1 teaspoon Bengali spice radhuni
  6. Get 2 tablespoon Grated ginger
  7. Provide 2-3 tablespoon Mustard paste
  8. Take 1 teaspoon Turmeric powder
  9. Provide 1 teaspoon sugar
  10. Get as per taste Salt
  11. You need 3-4 tablespoon Mustard oil
  12. Take 2 tablespoon Milk
  13. Prepare 1 tablespoon maida / all purposeflour
  14. Take 2 tablespoon Ghee
  15. Provide 1 tablespoon Garam masala powder / whole spice powder
Instructions to make Sukto:
  1. Heat oil in a pan. Fry karela till brown and keep aside.
  2. In the same oil fry all the veggies and keep aside.
  3. Add mustard seed, methi seed and radhuni to the well. Wait till they crackle.
  4. Then add grated ginger to it. Fry till the raw smell gone.
  5. Add fried veggies and fried karela. Add turmeric powder, salt and sugar. Mix well and cook for a minute.
  6. Mix mustard paste with water. Add the the mix, cover and cook till the veggies are done.
  7. Make a mixture of maida and milk. Add it to the curry. Cook till it thickens a little bit.
  8. Add garam masala powder and ghee.
  9. Tasty sukto is ready. Serve it with rice.
