The ingredients needed to make Kanika:
  1. Get 1 Cup Rice
  2. Get 3 tbsp Desi Ghee or oil
  3. Provide 1/2 tbsp turmeric
  4. Get 2 Cup water
  5. Provide 3-4 cloves
  6. Get 1 cinnamon
  7. Get 4 Green cardamom
  8. Get 1 Black cardamom
  9. You need 10-12 Almonds or Cashews
  10. Provide 10-12 Raisins
  11. Use 1/2 Cup Sugar
  12. You need 1/4 tsp Salt (according to taste)
Steps to make Kanika:
  1. Wash and soak the rice in water for 20 minutes.
  2. Heat the pan with ghee and fry almonds / cashews and raisins and drain and keep aside.
  3. Add the bay leaves, cloves, cinnamon, peppercorns and cardamom and saute for few minutes till fragrant come. Add rice to the pan and saute with spices on low flame gently making sure the rice grains do not break.
  4. Add the water to the rice cover and cook for 10 minutes, till it's three fourth cooked. Finally add sugar and dry fruits, stir gently and cover it for 2 -3 minutes on low flame.
  5. Turn off the gas and serve the Kanika Rice garnished with the almonds/ cashews and raisins. Hope you all like it.
