The ingredients needed to cook Kanika:
  1. Get 1 Cup small grained fragrant Rice
  2. You need 3 tbsps Ghee
  3. Prepare 1/2 tsp Turmeric
  4. Prepare 2 Cups water (Hot)
  5. Prepare 3-4 Cloves
  6. Use 1 inch Cinnamon stick
  7. Use 2-3 green Cardamoms
  8. Prepare 2 black Cardamoms
  9. Use 4-5 black peppercorns
  10. Use 8-10 Cashews
  11. Prepare 10-12 Raisins
  12. Take 4 tbsp Sugar
  13. Provide to taste Salt
Steps to make Kanika:
  1. Wash and soak the rice in water for 30 mins.
  2. Drain and let it dry for 5-10 minutes.
  3. Add 1 tbsp Ghee in rice.
  4. Add turmeric or yellow colour to the soaked and dried rice.
  5. Mix well and leave it for 30 more minutes.
  6. Heat a pan with the remaining ghee.
  7. Fry the cashews and raisins till light brown.
  8. Drain and keep aside.
  9. Add the cloves, cinnamon, peppercorns and cardamoms in the remaining ghee and saute for a minute till fragrant.
  10. Add the rice to the pan and saute with the spices and ghee on low flame for 2-3 minutes.
  11. Boil water in another vessel.
  12. Add the hot water and salt to the rice and cover.
  13. Cook it on medium flame for nearly 10 minutes or in pressure cooker for 1 whistle.
  14. Finally add the sugar and half of the fried cashews and raisins.
  15. Mix well and cook it for 2-3 minutes more on low flame.
  16. Switch off the gas and serve the fragrant rice kanika garnished with the remaining cashews and raisins.
