- Provide vegetables required
- Get 1 tomato
- Provide 1 brinjal/eggplant

- Next, wash and slice tomatoes. Add to batter. Fry till golden. Remove and set aside.
- Wash, peel, and slice onions. Wash and chop coriander and gren chillies. Add onions, coriander, and green chillies to batter. Mix till well combined. Using a spoon, add dollops of batter into hot oil. Fry till golden. Remove and set aside.
- Arrange assorted pakoras onto a board or platter. Use fresh herbs like mint and curry leaves to garnish. Serve with assorted chutneys.
