Steps to make Basanti pulao:
  1. At first wash the rice properly. In a heavy-bottomed pan take 1 and 1/2 little water. Add little salt and turmeric powder. When it starts to boil add the rice and cook it. The rice should be cooked properly but firm.
  2. Spread the rice in a plate so that the extra water goes away.
  3. In a kadhai heat 3 tbsp ghee and 2 tbsp of oil. Now in the same pan add 2 tbsp of ghee and 2 tbsp of oil. Add the bay leaves, cardamom, cloves, cinnamon stick as tempering. Add the cashew nuts and fry till they become golden then add the raisins. Fry for another minute on medium flame.
  4. Now add the cooked rice, chopped ginger, sugar and salt as per taste. Mix it well gently so that the grains of rice do not break. It should not be too sticky. Add 2 slitted green chillies. Check the seasoning and add salt and sugar if required. Cover it with a lid and cook for a couple of minutes.
  5. Finally your basanti pulao is ready to serve.
