The ingredients needed to prepare Basanti Pulao:
- Use 1 cup Gobindo Bhog Rice, washed and kept the rice in a collander
- Use 1/2 tbspn Desi Ghee
- Provide 1/2 tbspn refined oil
- Take 2 pc bay leaves
- Provide 3-4 green cardamoms
- Prepare 3 cloves
- Use 1 inch cinnamon
- Take 1 inch ginger(grated)
- Use 1 tsp Sugar
- Prepare as per taste Salt
- Provide 1/2 tsp Turmeric powder
- Provide 2 cups Water
- Use 8-10 cashews
- You need 8-10 raisins
Instructions to make Basanti Pulao:
- Switch on the stove, take a kadhai, place it on a stove, put the ghee and oil. Fry the cashews and raisins till golden brown. Take them out and keep aside.
- Now in the same oil, put the whole spices, fry for few seconds, till the aroma comes out, put the grated ginger, and stir well.
- Now add the washed rice, turmeric powder, salt and sugar, fry for 8-10 minutes.
- Keep on stirring in between, don't allow the rice to get burnt from below. So after frying, now time to add water. You can use direct pressure cooker for frying instead of kadhai. As I wanted to put the rice in a rice cooker, so I used Kadhai. Now after frying the rice, I have transferred it to the rice cooker. Added 2glass water and switch on the cooker.
- If you are using pressure cooker, after adding water, close the lid, and put it in high flame till one whistle.
- Let the cooker gets cool down by itself. Once the whistle releases, open and check, the delicious pulao is ready garnish with cashews and raisins and can add 1tspn ghee (optional) for more flavours. Enjoy the Pulao with your choice of rich curry.
