  1. You need 1 Carrot
  2. Provide 1 Banana Raw
  3. Take 4 Beans
  4. Prepare 200 Grams pumpkin White (Ash gourd)

  8. Take 1 Cup Coconut (grated)

  12. Take 3 Green chilli
  13. Get 2 Tablespoons Coconut Oil
  14. Prepare 15 - 20 Curry leaves

Instructions to make Avial:
  1. Cut all the vegetables into thick jullienne pieces not more than 2 inches long.
  2. In a kadai, put all the vegetables, turmeric powder and salt (the vegetable which take more time to cook should be put in the bottom, rest on top of it). Add little water, cover it and cook till all the vegetables are cooked.
  3. Coarsely grind coconut, jeera, green chilli and curd. Dont grind it to a smooth paste. It should be just mixed together.
  4. When the vegetables are cooked, mix the ground mixture and mix slowly. The vegetables should not be mashed.
  5. Let it simmer for 1 minute and then take it off from heat.
  6. Add coconut oil and curry leaves. Mix once again and close with the lid. This is done to trap the aroma of coconut oil and curry leaves.
  7. After some time, serve it hot with steamed rice.
