Instructions to make Chicken biryani:

  3. For marinating chicken: take chicken in a bowl.. Add coriander powder, chilli powder, turmeric powder, biryani Masala, ginger garlic paste, kasuri methi, oil, salt and curd as per the measures mentioned.. mix well and marinate for 1- 2 hrs…
  4. Rice cooking: take a rice cooking vessel add water, ghee, cloves, cinnamon, cardamom, bay leaves..boil the water..Add salt as required..add washed and drained rice..mix well..close the lid and half cook the rice.. keep aside..
  5. Take a flat bottomed biryani cooking vessel..Add 2-3tbspn ghee.. let heat.. fry the garnishing ingredients: cashews raisins & onions.. keep aside..
  6. To the same vessel add the ingredients kept for cooking chicken: cloves, cinnamon, cardamom, star anise, mace..saute well & add onions, green chillies and tomatoes.. saute for 5-10min in low flame..
  7. Now Add the marinated chicken..saute well.. close the lid and cook for 5 min..
  8. Open the lid and add Coriander leaves and mint leaves.. now close and cook for 15 min in low flame…
  9. Open the lid and add half cooked rice to the chicken.. spread it well to cover the chicken..
  10. Sprinkle the garnishing(fried onions, cashews & raisins)on to the rice… close the lid and cook for 30-35 min in low flame..
  11. Chicken biryani.. done!!.. serve with salad and green chutney..
