- Prepare 3/4 cups Basmati Rice
- Provide 1/2 cup thinly sliced Onions
- Use 1.5 cups Water
- Provide 1-2 Cloves
- Use 2 Green Cardamom
- You need 1/4 tsp Ginger grated
- Prepare 1 Bay Leaf
- Prepare 1/2 inch Cinnamon
- Take 1/2 tbsp Raisins
- You need 3 tbsp Ghee
- Take 6 Cashews
- Use to taste Salt
- Provide 2 tbsp Coriander leaves to garnish
Steps to make Malabar Nei Choru/ Ghee Rice:
- Clean and soak rice for 30 minutes. Drain excess water and keep it aside
- Heat 2 tbsp ghee in a pan,fry cashews until golden brown, keep it aside.
- Now add raisins and saute until puffed up. Drain and keep it aside
- Now add the onions in same pan. Saute onions until crisp and brown. Drain and remove the onions. Keep it aside
- Add 1 tbsp ghee in same pan. add all whole spices and saute until aromat
- Add rice and saute for 3-4 minutes.
- Add water with salt and mix well. Water should be slightly salty
- Simmer, cover and cook until water is absorbed and rice is done
- Gently fluff the rice. Garnish the rice with fried cashews, onions, raisins and coriander leaves.
- Serve warm with curry and raita
