The ingredients needed to prepare Aloo-matar-methi paratha:
- You need 4-5 Potatoes (boiled)
- Provide 1/2 cup peas (boiled)
- Prepare handful fresh Coriander chopped
- Take 1 cup fenugreek (chopped)
- Take 2 green chillies finely chopped
- Take 1 inch ginger grated
- Prepare 4-5 garlic cloves (finely chopped / ground)
- Provide to taste Salt
- Use 1 tsp red chilli powder or as per taste
- Prepare 1/2 tsp mustard seeds
- Use 1/2 tsp cumin seeds
- Prepare 1/2 tsp turmeric powder
- Use 1 tsp fennel seeds
- Take 1 tsp oil
- Use For Dough-
- You need 2 cups wheat flour
- Get 2-3 tbsp oil
- You need As needed Salt
- Use As required water to knead dough
- Get As required Ghee / oil as per need for roasting
Steps to make Aloo-matar-methi paratha:
- Put boiled potatoes, peas, fenugreek, coriander, green chillies, salt, red chilli powder, turmeric powder and fennel in a mixing bowl or plate and mix them all well.
- Now heat oil in a pan, add mustard seeds and cumin and let it crackle, after that add garlic and ginger and cook/stir for few seconds, add the prepared potato masala mixture, and mix well and turn off the heat. - Remove the mixture in a plate and keep it to cool.
- For making dough - Mix flour, oil and salt in a bowl and make a semi stiff dough using water. Cover the dough and keep it to set for 10 to 15 minutes.
- Now knead the dough again to make it soft. Take a portion from dough, dust with flour, roll it lightly and place prepared stuffing in centre, close it well with light hands, roll the paratha gently and place on hot tawa to roast from both sides.apply ghee or oil while roasting. Prepare all the paranthas in the same way.
- Serve this hot tempting paratha with curd / pickle.
