- Blanch 10-15 leaves of spinach and refresh in cold water
- Grind blanched spinach and ginger green chilli paste in a blender
- In a bowl add besan,curd, salt,water and sieve spinach ginger chilli puree
- Mix all the ingredients well
- Heat a pan,to this add besan mixture and cook
- Cook till start thickening
- Grease back of thali with oil
- Spread cooked besan spinach mixture on greased thali
- Spread it and let it cool down
- Grate paneer and keep.aside
- For tempering heat a tadka pan.To this add oil add rai and let it crackle.Then add curry leaves
- Pour half tempering on grated paneer
- After besan spinach spread is cooled down.Cut it and start folding gently
- Pour remaining tempering on rolled khandvi
- Also sprinkle tempered grated paneer on khandvi
