The ingredients needed to prepare Malai Cake:
- Get 2 cups All-purpose flour
- You need 1 tbsp Baking Powder
- Get 1 tbsp Baking soda
- Take 1 pinch salt
- Get 1 cup Curd
- Provide 1/2 cup Milkmaid
- Prepare 1 cup Sugar
- Prepare 1 tbsp Vanilla essence
- You need 2 kg Milk
- Get Few strands Kesar
- Provide 2 cups Malai/Rabri
Instructions to make Malai Cake:
- For making the malai take a vessel and add full fat milk to it (1.5kg)
- Bring it to a boil.You will see malai coming onto the top of the milk so start mixing it into the milk.
- After few minutes add milk made to it and mix it well.
- Boil it for 30 minutes until it forms cream in it.
- Once the cream is formed turn off the gas and let the mixture cools down.
- Now for preparing the cake take all-purpose flour, baking soda and baking powder and seive it altogether in a bowl.
- Now take another bowl and add soft butter and sugar.
- Whip it well and add curd to it.(make sure the curd shoud be thick)
- Whip all the wet ingredients together for about 3-4minutes.
- Once it becomes creamy and thick add the dry ingredients within 3slots.
- Whip it for 1minute and add vanilla essence to it.
- Now fold the cake and pour it in a cake tin.
- Bake it in a pre heated oven for about 30 minutes.
- Once it is baked take it out and let it cool.
- Now take out the cake from the mould and prick it with the help of toothpick.
- Now pour one layer of the cream/malai over the cake and let it soak for few minutes.
- After few minutes again pour another layer of the malai over the cake.
- Garnish it with the chopped dry fruits and refrigerate it for 2-3 hrs so that it gets set properly.
- Sprinkle some Kesar before eating.
