The ingredients needed to make Sukhiyan:
  1. You need 2 cups greengram -
  2. Take pinch salt - a
  3. Get 1 cup brown sugar -
  4. Prepare 1 cup coconut grated -
  5. Provide 1 tsp cardamom (elakka) powber -
  6. Prepare 3 tbsps ghee -
  7. Get batter
  8. Provide 2 cups maida -

Steps to make Sukhiyan:
  1. Roast the green gram in a heavy bottomed pan,until an aroma is released.let it cool
  2. Wash and cook the green gram by adding a pinch of salt.Make sure that they retain the shape and not get mushy
  3. When cooked,remove the lid and let all the excess water evaporate.Keep it aside
  4. Heat 3tbsp ghee in a heavy bottomed saucepan
  5. When it melts,add brown sugar.Mix well,and let the brown sugar melt
  6. Add the grated coconut and mix well
  7. Add the cooked green gram
  8. Heat it for a couple of minutes,mixing well and remove from the stove
  9. When cool,add cardamom powder and mix well
  10. Make small lemon size rounds with the greengram-brownsugar-coconut mixture
  11. Make a thick mixture with maida and salt along with enough water
  12. Heat 2 cups of oil in a saucepan
  13. Place a dry wooden chopstick in the oil.If it sizzles,the oil is enough to fry the sukhiyan
  14. Dip each greengram rounds in the maida mixture.Make sure that it is completely coated with the flour mixture
  15. Carefully dip it in the oil and fry to a golden brown colour
