- Prepare 1 cup Boiled potatoes

- Take 7-8 Curry leaves

- Provide 1 cup Besan(gram flour)

Instructions to make Vada pao:
- In a bowl mash boiled potato. Now in a pan add 2 tablespoon oil to this add mustard seeds and let it crackle.
- Now add curry leaves and Hing and saute for 5 secs.
- Now add chopped ginger garlic and saute for a while, add turmeric and chopped green chilli. Now add mashed potato it in and tossed well.
- When the mixture coats the potatoes well add salt and chopped coriander in it and mix the mixture properly.
- Cool the mixture. Now divide the mixture and make small round balls.
- Heat 2 cups of oil in a kadai. - In another bowl make a thick batter by adding besan, hing, turmeric, soda, salt and water. Dip the prepared potato balls in the batter and deep fry until golden brown.
- Take out the vada out of oil. Slit the pav and heat on tawa. Apply some mint chutney and tamarind chutney on pav.
- Place the fried vada in the center of pav, put fried chillies between the pav.
- Serve with chutney and fried chillies.
