The ingredients needed to prepare Maddur vada:
  1. Prepare 1 cup rice flour
  2. Get 1/2 cup semolina
  3. Get 1/4 cup all purpose flour
  4. Get 2 tbsp hot oil
  5. Take 1 onion finely chooped
  6. Use 7-8 curry leaves
  7. Use Pinch asafoetida
  8. Take 1/2 tsp salt or to taste

  10. Use 1/2 tsp Grated ginger

  12. Get as required Oil to deep fry
Instructions to make Maddur vada:
  1. In a large mixing bowl take rice flour, rava or semolina and maida or all-purpose flour also add 1 chilli chopped few curry leaves, pinch of hing, chilli powder, 1 onion and salt.
  2. Combine well making sure the spices get mixed well. Now heat 2 tbsp oil and pour over prepared flour mixture.
  3. Roughly mix with the help of spoon and later crumble with hand.Add water and combine well and prepare soft dough.Grease hands with oil and pinch small ball sized dough.
  4. Prepare ball and flatten over greased palm.
  5. Take a wok or frying pan and put the oil for deep frying. Once the oil is hot, drop the flattened dough carefully into the oil.
  6. Let one side get fried well and become a light golden then turn over and fry the other side.fry till the maddur vada turns golden and crisp.
  7. Serve Maddur vada with coconut chutney.
