- Take 4 eggs
- You need 1 onion paste
- You need 2 tomato paste
- Get 1 tbsp ginger + garlic paste
- Prepare 2 tbsp roasted besan
- Take 1 tbsp red chilli powder
- Provide 1/4 turmeric powder
- Get 1 tsp Kashmiri red chilli powder
- Prepare 1 tsp Coriander powder
- Take 1 tsp cumin powder
- Provide 2 tbsp curd
- Get 1 tsp sugar
- Get 1 tbsp cumin seeds
- Prepare to taste Salt
- Provide 1 pinch hing
- Use As required Coriander leaves for garnishing
- You need 2 bay leaves
- Take 1 tsp Egg frying masala
- You need 1 tsp Red chilli powder
- Get 1/4 tsp turmeric powder
- Provide 1 pinch salt
- Provide 3 tbsp oil
Steps to make Egg curry:
- Boil the eggs
- Heat oil in a pan, add red chilli powder, turmeric powder, salt fry masala then add egg and fry it.
- Heat oil is a kadai add hing, bay leaves cumin seeds & saute well
- Add onion paste & saute well then add ginger+garlic paste saute well.
- Add tomato puree & saute, add all the dry masalas mentioned above & saute well
- Simmer until the oil doesn't float on the sides.
- Add roasted besan mix it well. cook it 5 mins
- Add curd & sugar & salt and mix it well.
- Add 1 glass lukewarm water cook it for 5 mins
- Add fried egg and mix it, again cook for 5 mins.
- Garnish with coriander leaves.
