The ingredients needed to make Winter khichu:
- Provide 1 cup wheat flour
- Use 3 tbsp whole moong
- Provide 2 tbsp rice, (Any one but not basmati)
- Take 3 tbsp math. (Brown bean)
- Provide 2 tbsp sago (sabudana)
- Take 1/4 tsp black pepper corns
- Prepare 1/2 tsp jeera, (cumin seeds)
- Provide Water as required
- You need to taste Salt
- Provide 1/4 tsp hing/ asfoitida
- Take 1/2 tsp Turmaric powder
- Get 1/2 tsp red chilli powder
- Take 1 tsp till/ sesame seeds
- Use 1 tsp ginger-chilli paste
- Provide 1 tsp oil
- Get 1-2 tbsp oil to serving
- Provide Dry garlic masala powder / achar masala for seasoning
Instructions to make Winter khichu:
- In a pan roast whole moong, math, rice, sago, black pepper corns and jeera. When it release it's aroma, remove from heat and let it cool completely. Then grind them and mix with wheat flour.
- Other side, heat double quantity of water and add Turmaric, ginger-chilli paste, salt, chilli powder, hing, oil and till. Keep it boiling for 2-3 min.
- Now add half of the flour and mix well with the help of roller. Again add some four and mix well, add enough to mix like a smooth dough texture. Turn off heat. Cover with lid and keep for 2min covered.
- Take some (1/4- 1/2 cup) into plate and add oil,(if possible, use groundnut oil, 1tbsp.) sprinkle seasoning of your choice and serve hot. (I sprinkled my dry garlic masala powder, u can add raw mango pickle dry masala it tastes better.)
