The ingredients needed to prepare Achari Baigan:
  1. Provide 1 Tablespoon peanuts
  2. Use 7-8 Brinjals
  3. You need 1 small piece of coconut, (or 1/4 cup coconut slices)
  4. Take 1 Tablespoon garlic paste
  5. Take 2 Tablespoon oil
  6. Take 1/4 cup chopped onions
  7. Get 1 Teaspoon cumin
  8. Get 1 Teaspoon Coriander
  9. You need 1 Tablespoon mango pickle
  10. Provide to taste Salt
  11. Provide 1 Tablespoon jaggery
  12. Get 1 Teaspoon Red Chilli Powder
Steps to make Achari Baigan:
  1. Wash and cut slit Brinjals.
  2. Coarsely Grind coconut and peanuts
  3. Heat about 1 Tablespoon oil in a pan and add cumin
  4. Add Onions and garlic paste and allow it to cook
  5. Once Onions are done, add Coriander powder, red chilli powder, pickle, jaggery and salt. Mix it well.
  6. Now add coconut peanut powder.mix it and remove it from flame.
  7. Now stuff this in Brinjals and keep little aside to form gravy.
  8. Now heat remaining oil in pan add stuffed Brinjals and cook it for 5 minutes
  9. Now add remaining stuffing masala and water and cover it with lid till Brinjals are cooked completely.
  10. Remove the lid and reduce the gravy.
  11. Achari baingan is ready to serve. Serve it with nice soft Jowar Roti with dollop of butter.
