The ingredients needed to prepare Vada pav:
- Prepare For vada
- Provide 8-9 medium size potatoes boiled & mashed
- Prepare 2 tsp garlic paste
- Provide 1/2 tsp turmeric powder
- Take 1 tsp mustard seeds
- Provide 8-10 curry leaves
- Provide 1 tsp green chilli paste
- Use 1 pinch Hing/asafoetida
- Provide 3 tbsp oil
- Take 1 tbsp finely chopped coriander
- Use To taste Salt
- Use For the outer batter
- You need 1 cup besan/gram flour
- Take To taste Salt
- Take 1/2 tsp Turmeric powder
- Take 2 tbsp rice flour
- You need 1 tbsp hot oil
- You need As needed Oil for frying
- Get For the red chutney
- Take 1 cup salted boondhi
- Get 10-14 garlic cloves
- Prepare 1 tsp cumin seeds
- You need 2 tbsp red chilli powder
- Take 1/2 tsp salt
Instructions to make Vada pav:
- In a pan heat oil, once the oil becomes hot, add mustard seeds, curry leaves, garlic paste, turmeric powder, hing and green chilli paste, sauté this for a minute, then add salt and boiled mashed potatoes. Mix well, add finely chopped coriander and set aside. Make small ball shape vadas once the mix is lukewarm.
- For the red chutney, in a mixture jar take garlic cloves, cumin seeds, salt and red chilli powder blend this into a semi coarse mix, now add the boondhi and crush it into a coarse chutney.This is your street style red chutney.
- Now to make besan batter in a bowl take besan, rice flour, turmeric powder, salt, add 1tbsp hot oil and water to make a semi thick batter, now dip the vadas in the batter and fry them in hot oil.
- Cut the pav, apply imli chutney & red chutney, place a vada in the centre, serve with more red chutney & green chilli.
