- Provide 200 grm lady finger
- Use 1 big onion slice
- Use 2 tsp Oil
- Take 2-3 green chillies
- Take 1 tsp coriander powder
- Use 1/2 tsp chaat masala
- Take 1/2 tsp dry mango powder
- Prepare 1/2 tsp turmeric powder
- Take 1/2 tsp red chilli powder
- You need 1 pinch red chilli flakes (optional)
- Get 1/2 tsp ajwain

- Prepare 2 tsp Coriander leaves for garnish
Instructions to make Achari bhindi:
- Chopped the lady finger as per choice shape i have chopped in long 4 slit shape
- Then heat the oil add cumin seed and ajwain after crackle of seed add chopped onion, green chilli stir it till light brown colour in high flame
- Then add slice ladyfinger fry for 1 min in high flame add red chilli powder, coriander powder, dry mango powder, turmeric powder and salt mix it well stir fry in high flame for 2-3 min
- In high flame cooking no changes of colour of ladyfinger
- Then garnish with coriander leaves and red chilli flakes
- Serve hot hot with roti
- While adding of salt please take care of we are adding chaat masala and dry mango powder first taste then add salt
