- Prepare 500 gms mutton
- Use 2 tsp ginger garlic paste
- Get 4 tsp curd
- You need 4 tsp fresh cream or malai
- Take 1/2 cup milk or 7-8 tsp

- Prepare 4-5 green chilli
- Provide 1 inch ginger
- Take 7-8 garlic pods

- Take a pressure cooker add mutton, ginger garlic paste, salt 1/3 tsp and 5-6 tsp water. When 1 whistle come slow the gas flame and cook for 10 to 15 minutes.
- Now check the mutton if mutton has 90% cooked and have any extra water then dry it.
- After that take a mixer jar put green chilli, onion, coriander leaves,ginger-garlic and add little bit of water make a paste.
- Now paste is ready transfer in a bowl and again take the same jar add cream, curd and milk and grind it once and transfer in the same bowl now add mutton in the paste.
- Add chaat masala,kasuri methi salt,garam masala, lemon juice, 2 tsp of vegetable mix everything very well.Keep aside for 30 minutes.
- After 30 minute, take a pan add 1 tsp oil,gas should be high flame, once oil is hot put mutton in the pan and cooked for 5 minutes. Mhtton has already cooked, we want only brown spot on the mutton.
- Again take a big pan add 3 tsp of oil when oil is hot add gravy and cover the pan and cook for 5 minutes on high flame. After 5 minutes add red chilli powder and again cover the pan and cook per 10 minutes on low flame and stir spoon between. Now 10 minutes has complete add mutton mix it well add 5-6 tsp of water mix it and again cover the pan cook for 10 minutes on low flame.
- Now 10 minutes complete this time gas flame off mutton is completely cooked. Take charcoal burn it and take a small steel bowl or aluminum foil put inside the pan add 1 clove and green Cardamom and put a little bit of desi ghee and cover the pan at least for 10 minutes for smoky and grilled flavour enhance the taste of Mutton Afghani.
