The ingredients needed to make Hyderabadi Mutton Daleem:
- Prepare 1 kg Mutton Bone-in
- You need 1/2 kg Broken Wheat or Daliya
- Prepare 2 tsp Salt or to taste
- You need 3-4 Onions thinly sliced and fried
- You need 1/2 cup Ghee
- Get 2 tbsp Red Lentils or Masoor Daal
- Get 2 tbsp Yellow Lentils or Moong Daal

- Use 1/2 tsp Turmeric powder

- Prepare 3 Cinnamon sticks small ones
- Get 10-12 Black Peppercorns
- Prepare 5-6 Cloves
- Use 1 tsp Caraway Seeds
- You need 3-4 Cardamoms
- Prepare 1/4 cup Cashewnuts paste
- Take 12-14 Fried Cashewnuts
- Get 12 Fried Almonds
- Take 1 small bunch Coriander Leaves finely chopped
- Provide 1 small bunch Mint Leaves chopped
- Prepare 1 Lemon medium sized cut into Wedges
Instructions to make Hyderabadi Mutton Daleem:
- Soak all the lentils and the broken wheat overnight. Pressure cook mutton along with all the powdered spices and yoghurt using water as required. Meanwhile, cook the soaked lentils and wheat in a separate pot on a low heat for 20 minutes.
- Grind the cooked wheat and lentils mix until a smooth paste is obtained. Heat Ghee in a cooking pot, add all the whole spices and fry for a minute. Now add the cooked and grinded lentils and wheat mix to it along with the pressure cooked mutton.
- Add deep fried and crushed onions too. Finally add Cashew nut paste to it. Mix well and allow it to cook for 15 minutes more. Add more ghee if required. Garnish with fried nuts and Almonds along with Coriander and Mint Leaves.
