The ingredients needed to cook Mutton Paya:
- Get 1 kg Mutton leg pieces(cut in small pieces)
- Get 2 big Onion sliced
- Take 1 tbsp Ginger-Garlic paste
- Provide 1 big chopped Tomato
- Use 1 tablespoon kashmiri red Chilli powder
- You need 1 tablespoon Coriander powder
- Use 2 teaspoon Garam Masala powder (homemade)
- Get 1 teaspoon Cumin powder
- Prepare 1/4 tsp Fennel(Saunf) powder
- Provide 1/4 tsp Carom seed(Ajwain) powder
- Take 1/2 teaspoon Turmeric powder
- Prepare 2-3 whole green Cardamom
- Prepare 2 inch long Cinnamon stick
- Provide 6-7 whole Black pepper corn
- Take 2 tablespoon Mustard oil (or any cooking oil)
- Provide to taste Salt
Steps to make Mutton Paya:
- Take fresh good quality mutton leg small pieces.
- Heat 2 tbsp mustard oil or any type of cooking oil in a big pressure cooker. Add in sliced onion and cook until onion becomes light golden brown.
- Also add in whole garam masala like cinnamon,cardamom and black peppers.
- Saute for a couple of seconds and then add in ginger-garlic paste.
- Add in chopped tomato and saute for 2-3 minutes until tomatoes become soft.
- Next add in all the spices and salt, mix well and saute for few minutes until the mixture becomes mushy and oil starts separating from the spices.
- Add in mutton pieces and saute further 5-6 minutes. Sprinkle little water to avoid burning of spices.
- Add in sufficient hot water(approximately 2 l) to the cooker and then close the lid.
- Cook in high heat until 2 whisles and then reduce the heat to medium low and cook for about 2 and 1/2 hour.
- After 2&1/2 hours later switch off the flame. Wait to release steam in itself. Delicious and nutritious mutton paya is ready now. The gravy should be very thin in consistency.
- Serve hot with bread or any kind of rote, naan etc.
- Note: If you cook in saucepan then cook in medium low heat for 3&1/2 to 4 hours.
