The ingredients needed to prepare Ndengu Chili:
- Provide 1/2 cup raw ndengu (selected and washed)
- Prepare 1/2 kg beef (any cut, little fat, little bone for flavour), cubed
- Prepare 4 grilled chicken necks (available at many chicken butcheries)
- Prepare 10 medium to large chili peppers or more as per taste, sliced
- Take 8 tomatoes, blended
- Get 1 large green capsicum (hoho), cubed
- Provide 2 bunches dhania, chopped
- You need 1 large carrot, cubed finely
- Get 7 sticks spring onions, sliced
- You need 1 1/2 tablespoons Simba Mbili curry powder
- Provide 1 1/2 tablespoons cumin powder
- Take Potatoes (Optional)
- You need To taste salt
- Provide 5 tablespoons garlic cooking oil (Fresh Fry have)
Steps to make Ndengu Chili:
- You need a big stock pot or this will happen.
- Salt the beef and sear it by heating 1/2 the oil to very high temperature then tossing the meat in it until it browns very well. Remove to another container.
- Put in the chopped and cubed vegetables with the other half of the oil and fry until wilted.
- Add the spices and cook a bit.
- Return the meat to the pot.
- Add in the blended tomatoes and grilled necks.
- If you bought a tough cut of meat, simmer for 30-45 minutes before adding the ndengu. If it was a more tender cut, add in the ndengu, add some water to lighten the sauce, bring to boil, then reduce heat and simmer for about an hour until the ndengu is cooked. Keep adding water if it's too thick.
