The ingredients needed to make Beetroot Raita:
- You need 1 cup thick and chilled yoghurt
- Prepare 1 medium sized beetroot, grated
- Provide 2-3 mint leaves finely chopped
- Get 1 tbsp finely chopped coriander
- Take as needed Black salt
- Take 1/4 tsp chaat masala or raita masala
- Get 1 tsp sugar
- You need 1 green chilli finely chopped
- Take 3-4 curry leaves
- You need 1/4 tsp mustard seeds
- Provide 1 tsp oil
Instructions to make Beetroot Raita:
- Firstly, whisk yoghurt in a big mixing bowl. Add grated beetroot, salt, sugar, raita masala or chaat masala, coriander and mint leaves. Mix well and keep aside.
- Now heat oil in a small pan.
- Add mustard seeds.
- As mustard seeds splutter, add green chillies and curry leaves. Fry for few seconds.
- Pour this tempering on beetroot and yoghurt mixture. Mix well.
- Garnish with coriander and mint leaves. Serve this delicious raita as an accompaniment to a spicy dish, pulao or parathas.
