  1. Provide 250 gms mutton
  2. Get 1 bowl rice (soaked in water for about 2 hours)

  1. Mix 250 gms mutton, 1 tbsp ginger paste, 1 tbsp fresh turmeric, 1 tbsp garlic paste, salt as per taste in a bowl and allow it to marinate for about an hour.
  2. Heat 6 tbsp oil in a thick bottom vessel. Add 1 tbsp cumin seeds and let them splutter. Add 2 dry red chilies, 1/2 tsp asafoetida, all whole spices, 1 tbsp fennel seeds, 1 tbsp cumin-coriander seeds powder. Saute.
  3. Add the marinated mutton pieces and 1 small cup of water. Cover and let the mutton pieces cook.
  4. Once the mutton is somewhat tender, add one more cup of water. Mix, cover and let the mutton pieces cook fully.
  5. Once cooked, add 1/2 tsp turmeric powder, 1 tbsp garam masala, 2 tbsp red chilli powder, 2 tbsp khoya or mawa. Let the mawa melt. Add 1 tbsp curd and mix.
  6. Then add 1 bowl rice and water double the quantity of rice. Stir and add 1 tbsp cumin-coriander seeds powder & 2 tbsp homemade ghee and salt if required. Cover and allow the rice to cook.
  7. Once cooked, sprinkle 2 tbsp rose water for. Mix well and serve hot.
  8. Note - I have added some beet juice in some rice at the end to give it a slight colour
