- Provide 1 cup Soaked biriyani Rice
- Take 1 Beetroot
- Provide 1/2 cup grated coconut
- Provide 1/2 cup Sliced Onion
- Take 3 tbsp Coriander Leaves
- Get 1 Green Chilli
- Prepare 2-3 Cloves
- Prepare 6-7 curry leaves
- Get 1 Bay Leaf Salt – as needed
- Prepare 2 tbsp ghee
- Provide 1 Lemon Juice
Instructions to make Beetroot coconut rice:
- Take a deep pan - Add 2 cups of water - Let it boil - Add soaked rice and salt and let the rice cook. - Make sure they are done but not mushy. - Drain excess water if any.
- Now Heat another flat pan,add ghee and add mustard seeds. When they splutter add curry leaves, cloves, bay leaf. When they are aromatic add sliced onions and sauté.
- Also add chopped green chilli and sauté - Now add grated beetroot mix gently and cover to let it cook for 5 minutes. Now add grated coconut and stir.
- Once beetroot is softened a bit add cooked rice to it and very gently mix everything so as to avoid breaking of rice.
- Add lemon juice and little more melted ghee on the top for extra flavor before serving.
