The ingredients needed to prepare Achari khichdi:
  1. Get 1.5 cups small grain rice
  2. You need 2/3 cup moong dal
  3. You need 2/3 cup masoor ki dal
  4. Provide 1 big onion (chopped)
  5. You need 4 green chillies (slitted)
  6. Provide 1 tsp ginger paste
  7. Use To taste salt
  8. Get 2 tsp red chilli powder
  9. Take 1 tsp turmeric powder
  10. Use 1 tsp cumin powder
  11. Take 1.5 tsp coriander powder
  12. Prepare 1 tsp cumin seeds
  13. You need 1 bay leaf
  14. Provide 2 dry red chillies
  15. Get 2 cardamom
  16. Use 1/2" cinnamon
  17. Get 2 cloves
  18. You need 2 tbsp mango pickle
  19. You need 2 tbsp ghee
  20. You need 1/4 tsp garam masala powder
  21. Prepare 1 tbsp Chopped coriander leaves
  22. Take 3 tbsp oil
  23. Prepare As needed Few pieces of cauliflower, pumpkin and potato
Instructions to make Achari khichdi:
  1. Wash and drain water from rice and dals. Add oil to pan and let it hot. Add bay leaf, dry red chillies, cumin seeds, cardamom, cinnamon,cloves and let them crackle. Add onion and let it be translucent. Add ginger a paste.
  2. In a pan add red chilli powder, turmeric powder, cumin powder, coriander powder and water and mix well and add to the pan. After 1 minute add 1/3 cup of water. Cook well. Add rice and dals.
  3. Saute for 4 minutes. Add to hot water. Add fried vegetables. In medium flame Cook using lid for 8 minutes. Stir occasionally. Low the flame. Cook for 15 minutes.
  4. Add mango pickle and mix well. Cook for 1 minute. Add green chillies,garam masala,ghee, coriander leaves.
