  1. Prepare a loaf pan by greasing with oil and placing parchment paper.
  2. Preheat oven at 180C for 12-15 minutes.
  3. Warm 1/4 cup milk and add coffee powder, mix and keep aside.

  5. In a bowl mix curd and mix jaggery powder(I used organic jaggery and let it melt well in curd), add baking powder and soda and leave it for 2-3 minutes to bubble.
  6. Now after 2-3 minutes add melted butter and ghee, vanilla extract and mix.
  7. Add flour and coffee to this mixture by alternating in 2-3 portions.
  8. Pour the batter in the prepared loaf pan and bake for 30 minutes.
  9. After 30 minutes insert a skewer or toothpick and check if it comes out clean. Or bake for another 10 minutes.
  10. Cool on rack for 5 minutes and remove from pan. Serve warm or cool and store in airtight container for 2-3 days.
