- batter will be runny. don't worry.
- spray 9 inch pie pan heavily with baking spray.
- pour pancake mix into said pie pan.
- bake for 20 minutes on middle oven rack. until browned and fluffy.
- remove from oven. there will be air bubbles. it will deflate. let rest for a minute.
- using a fork pop remaining air bubbles and press down to flatten.
- filling:
- drain can of fruit cocktail ot whatever fruit you use.. well and reserve liquid for later.
- pour fruit into pancake pie.
- sprinkle with coconut.
- syrup topping:
- mix the reserved juice from can with the rum and the pancake syrup. whisk until well blended.
- just before serving slice like you would a pie..
- pour syrup on top and serve.
- you may use any canned drogue you like. hours best with pineapple or peaches.
