- Take 1 cup Meth leaves
- Get 1 Onion
- Prepare 1 Tomato

- Clean and wash the methi leaves. - - Chop the Onion, tomato, green chilli and capsicum finely
- In a pan heat the oil and crackle the mustard and cumin then add the onion
- Saute the onion well and then add the green chilli, tomato, curry leaves and capsicum with little salt.
- Then add the methi leaves and cook well.
- Once it is cooked add turmeric powder, hing, garam masala and saute the same
- Meanwhile we shall prepare the egg mixture, by beating the eggs with red chilli powder and little salt. Here I beated the egg white and yellow separately to make it fluffy.
- Add the beaten eggs to the cooked methi leaves mixture.
- Mix the egg mixture finely with the methi leaves mixture.
- Cook for about 3-4 minutes on sim flame or until eggs are done.
